Our industrial food system is responsible for a tremendous amount of greenhouse gas emissions (GHGe). Consider the synthetic nitrogen fertilizers applied to crops, the oil and gas consumed in production, transportation, processing, and packaging, even the Chlorofluorocarbons (CFCs) emitted from mechanical refrigeration. Making low carbon food choices can significantly reduce your carbon footprint while improving your diet. A simple rule for a low carbon diet is to eat less meat and processed products, and to eat more local and fresh food.
